My Recipe of the Month for March

KORMA CURRY


1 tsp ground cinnamon
1 tsp ground coriander
2 tsp ground cumin
2 tsp garam masala
1/4 tsp chilli powder
1/4 tsp curry powder
500g cubed meat (lamb, chicken or beef)
1 onion sliced
1 inch of ginger - grated
2 cloves of garlic - pressed or grated
1 tbsp tomato paste
2/3 cup of water
200g tub natural yoghurt

Fry onions in oil until nearly cooked.  Add ginger and garlic and fry lightly.

Add spice mix and fry for 1 minute or until fragrant - stirring all the time.

Add meat and stir to coat. When browned and nearly cooked add tomato paste and water and bring to a simmer, cover and stir occassionally.  Meanwhile, cook rice.

Add yoghurt and heat lightly without boiling.

Serve with basmati rice and chapatis.
